Til Ki Gajak or Til Gud Chikki Recipe or Til Gud Gajak or Sesame Jaggery Chikki recipe with video in Hindi and step by step photos - a recipe made using white sesame seeds (sada til) and jaggery (gud) is a popular dessert which is specially made on the occasion of Makar Sankranti.

There are two kinds of desserts that are almost similar in preparation. One is mungfali ki gajak and the second one is til ki gajak. Til Gud Ki Gajak recipe is sometimes called til chikki or til gud ki patti or simply Gud Gajak.

Besides making the patti or gajak you can also make til gud ladoo. It's just while making the til gul ladoo we make balls and while making til gud chikki we flatten it out and make squares or bars that look like patti. This is the only difference between til ke laddu and til chikki.

Makar Sankranti or Makara Sankranti is a holy festival that is celebrated on the 14th of January every year. People take bath in holy rivers like Ganga, Yamuna, Godavari, Krishna and etc. It is called the festival of harvest. People make such sticky sweets such as til gud ki chikki or til gud ke laddu. These sweets are symbolism of peace, harmony, and togetherness.

Basically, we melt gud or jaggery and then add toasted sesame seeds to it. We cook it until it starts boiling and the jaggery mixes well with sesame seeds. Finally, we just pour it onto a surface and roll it with parchment paper on top. It holds shape very quickly. So, within minutes we cut it into squares and enjoy them as it is.

Til Chikki or Til Gud Chikki is such a popular sweet dessert, that it is made all over India. You can easily find people selling them in the markets, especially between 10th January to 15th January every year. But, making til chikki or sesame jaggery chikki at home is an incredible experience. I made it for the first time and I just LOVED it.

How to Make Tik Gajak? Til Chikki Kaise Banate Hai?

  • Dry Roast Til: In the first step of the recipe, we dry roast til or sesame seeds. This step is important to eliminate the raw smell of til and to get that nutty fragrance.

  • Melt Jaggery: In the next step we'll melt gud or Jaggery with some water until it melts completely. We generally do it on a low flame so that it doesn't stick to the bottom of the pan and gets burnt eventually.

  • Mix Til and Jaggery: Lastly we come to the most interesting part of the recipe where we combine til and jaggery. Til Ki Gajak or Til Gud Chikki Recipe or Til Gud Gajak or Sesame Jaggery Chikki recipe symbolizes the way people in India stay together in spite of their uniqueness and individuality. In this step, we are actually combining two ingredients that are poles apart from each other. Sesame seeds are generally used in Chinese recipes whereas gud or jaggery is used to make sweets. But, while making Til Ki Gajak or Til Gud Chikki Recipe or Til Gud Gajak or Sesame Jaggery Chikki recipe we are actually combining these two ingredients and honoring our traditions. After all, India is a land of customs and traditions. And, it is these traditions that help us stay strong and stay together with each other.

  • Roll the Chikki: Finally, pour it on a greased surface and roll it out. Place a greased parchment paper over it and roll it gently. After you've rolled it, gently peel the parchment paper.

Give your chikki the shape that you want. If you were making til ke laddu then you would have started rolling them into small balls by now.

  • Cut them in Squares: Finally cut them into squares and your Til Gud Chikki is ready.

Tips to make this recipe effectively:

  • Be careful while Melting Jaggery: When you are melting jaggery with water do that on a low flame or low heat. It takes a few seconds on high heat for your jaggery to stick to the bottom of the pan. So, be very careful and stir occasionally, not letting it touch the bottom of the pan.
  • Do Not Over-roll the Mixture: Sometimes we might over-roll the mixture and when we do that, we actually make it really thin and that way we'll have a lot of difficulty picking it out.
  • Cut Squares Immediately: When making til gud chikki, try to cut the squares as soon as you roll it. Because gud or jaggery solidifies at room temperature in literally NO-TIME. So, be quick while cutting them into squares.

Equipment

  • Non Stick Pan

Ingredients
  

  • 1 Cup Jaggery 200gm
  • 1 Cup Sesame Seeds
  • 1 Cup Water
  • ½ Teaspoon Ground Cardamom or Elaichi

Instructions
 

  • In a non-stick pan add 1 cup of til or white sesame seeds. Dry roast til on medium-low heat until you get a toasty and nutty fragrance. Take it out on a plate.
  • In a separate pan melt 1 cup gud (jaggery) with 1 cup water. Allow it to come to a boil over low heat.
    Once it is half melted add ghee and cardamom powder. Stir well and allow it to come to a deeper and darker colour.
    You will know it is done when you take a small about of jaggery and place it in a bowl of water. If it forms a ball, it means it is completely done.
    Add the Til and stir until combined.
  • Now pour this on a greased flat plate or a wooden chopping board. Apply some ghee over a parchment paper and keep it over the gud. Roll it gently to flatten it out.
  • Lastly, take a knife and grease it with ghee or butter. Cut out squares of sizes that you prefer. Enjoy when cooled down completely.

Notes

  • You can store these til chikki in an Air-tight container. It will stay fine for up to days.
