Dahi Bhindi Recipe | Okra with Yogurt | दही वाली भिंडी

Dahi Bhindi or Okra with Yogurt is a popular North-Indian Dinner recipe with Bhindi or Okra or Ladies finger. The bhindis or okra sauteed and is then immersed in a tangy, creamy, and sweetish sort of gravy.

This Bhindi with Dahi recipe is super-easy and something that you will remember all your life. Just a few spices and just a bit of sauteing and simmering is all that it takes to make this delicious Dahi wali bhindi.

I really didn't know that Okra or Bhindi makes such an incredible combination with Dahi or Yogurt. It is when I was staying with a North Indian family in Delhi as a Paying Guest, I realized how awesome this recipe actually is.

So, that was my first experience with bhindi with yogurt. I still remember how I called my Mom and told her how tasty it was. I went through the details of the taste -  like a child would tell his mom what happened at his school.

My Mom was so impressed by the recipe that she made it at my home. And my Dad loved it. Since then Okra with Yogurt has become one of the MOST popular recipes in our family.

Whenever we are in a bad mood and feeling all sullen, my Mom makes this. She serves this with plain roti and we are all back to happy.

Trust me, guys! This Bhindi with Dahi recipe is a mood-changer. Just one bite of this recipe and you'll be like - "Man! Are you sure this is bhindi?"

The Yogurt along with tomatoes contributes to the tang in this gravy, But, the bhindis or okra gets beautifully succulent and soft. The creamy, tangy, and smooth yogurt gravy penetrates the bhindis and makes them so flavorful.

How Do I choose Best Bhindi?

Shopping for Bhindi is not rocket science. I am sure many of us already have been doing this for a long time and we are sort of at an auto-pilot mode when it comes to choosing the best bhindi. But, there are a few basic things that you should keep in mind while shopping for bhindi.

  • Choose small bhindis. Small ones will have fewer seeds. And Fewer seeds means they are young and tastier.
  • Choose thin bhindis. Thin or slender bhindis are tastier than fat ones.

What is Hyderabadi Dahi Bhindi?

I know many people have asked me about it. What is Hyderabadi Dahi bhindi? what is vendakkai Curry? Well, basically while baking Hyderabadi Dahi Bhindi people use curry leaves along with some cashews. And also the base of the gravy is of black mustard seeds.

So, that's the only difference between north Indian Dahi wali Bhindi and Hyderabadi Shahi Bhindi. Other than that, everything is absolutely the same.

How to Make Dahi Bhindi at home?

One of the popular Indian Dinner recipes, Dahi Bhindi will make your dinner sorted, So creamy and so tasty.

  • First, wash bhindi in some water. Dry them out with a kitchen towel.
  • Now, sautee bhindi in some oil. This will take about 10-12 minutes on low flame. Once they change color, take them out on a parchment paper or tissue paper lined utensil.

  • Next in the same pan, add some more oil and add in Jeera or Cumin Seeds along with Hing. Now add cloves/laung, broken dalchini, choti elaichi, badi elaichi and tej patta.

  • Now add Onions which should be cut into dices and once the onion gets translucent, add the broken green chilies, and ginger-garlic paste. Cook until the raw smell of the ginger-garlic paste goes away.
  • Finally, add the dry spices which are turmeric powder, red chili powder, cumin powder, and coriander powder. sautee the spices with a touch of water until they are completely done.

  • Now add diced tomatoes. Cook with some water.
  • Now whisk yogurt and add it to the pan. Do not forget to whisk yogurt, or else, it might curdle. Once you have added Yogurt you have to keep stirring constantly. And your flame should be on low.

  • Next, add fried okra or bhindi and stir well for about 15-seconds. Your Dahi wali bhindi is ready.

  • Enjoy with Naan, phulka, or plain rice.

Ingredients
  

  • 250 gm Okra or Bhindi
  • 2 Tablespoons Mustard Oil to fry Bhindi

Preparing the Dahi Bhindi Gravy

  • 1 Tablespoon Mustard Oil
  • 1 Small Bay leaf
  • ½ Teaspoon Jeera or Cumin Seeds
  • 1 Pinch Hing
  • 2 Pods Green Cardamom or Choti Elaichi
  • 1 Pod Black Cardamom or Badi Elaichi
  • ½ Inch Dalchini or Cinnamon stick
  • 2 Medium-sized onions diced
  • 5-6 Small Green Chilies chopped
  • ½ Teaspoon Haldi Powder or turmeric powder
  • ½ Teaspoon Red Chili Powder or Lal mirch powder
  • ½ Teaspoon Coriander Powder or Dhania Powder
  • ½ Teaspoon Cumin Powder or Jeera Powder
  • 2 Medium-sized tomatoes diced
  • ¼ Cup CURD Beaten
  • ½ teaspoon Salt or as per taste
  • ½ Teaspoon Black pepper powder or Kali Mirch Powder

Instructions
 

  • Heat mustard oil in a pan and fry the Bhindi until they turn crispy. Once fried, take them out.
  • In the same Pan, add some more oil, followed by dry spices - Jeera, Hing, Tej Patta, Choti Elaichi, Badi Elaichi, Dalchini.
    Now add the diced Onions, broken green chilis, ginger garlic paste, and the dry spices - Haldi, Jeera, Dhaniya, and Mirchi Powder.
    Once the spices get roasted, add the diced Tomatoes and saute over low flame. Add some salt. Cover cook for 2-3 minutes until tomatoes get tender.
  • Once the Tomatoes get cooked, add beaten curd and mix well. Now add the fried Bhindi and mix well.
  • Serve this Dahi Bhindi hot with Roti or Parathas
